Examples of emulsion-based foods include ice cream, yoghurt, and mayonnaise. The physicochemical properties of emulsions play an important role in food systems, as they directly contribute to the texture, sensory and nutritional properties of foods. One of the main properties is stability, which refers to the ability of an emulsion to resist physical changes over time. The development of an effective strategy to prevent undesirable changes in the properties of a particular food emulsion depends on the dominant physicochemical mechanism(s) responsible for the changes. In practice, two or more of these mechanisms may operate in concert. It is therefore important for food scientists to identify the relative importance of each mechanism, the relationship between them, and the factors that influence them, so that effective means of controlling the stability and physicochemical properties of emulsions can be established. Several techniques are used to study the physical behavior and structure of emulsions. Each technique has its advantages and disadvantages and provides different insights into the destabilization mechanisms. Among the oldest methods used to study emulsion stability is visual observation and small deformation rheometry. More recently, other techniques, such as ultrasound profiling, microscopy, droplet size distribution, and measurement of surface concentration to characterize adsorbed protein at the interface, have also been employed. Some of these techniques, such as droplet size distribution, involve some form of dilution. However, dilution disrupts some structures that play an important role in stability. The ability to study the stability of food emulsions in their undiluted form may reveal subtle nuances about their stability. Diffusing wave spectroscopy (DWS), laser scanning confocal microscopy (LSCM), nuclear magnetic resonance (NMR), and Turbiscan are among the more powerful, non-perturbing techniques used to characterized emulsions. 68 pp. Englisch.

From the very beginning, educational institutions and industrial research laboratories have contributed greatly toward determining and elucidating the fundamental principles of corrosion reactions. Some of the basic principles involved in cor rosion of metals can be credited to early investigators. Michael Faraday in 1830-1840 studied the relationship between the quantity of a metal dissolved and the electric current which was produced by this reaction. He also proposed that the passivation of iron was through the formation of a film and that the dissolution of a metal was electro chemical in nature. Sir Humphrey Davy in 1824 worked out the funda mentals of galvanic corrosion of ships' hulls and applied sacrificial zinc anodes to protect them from sea water corrosion. Richard Arlie in 1847 demonstrated that corrosion produced by oxygen at the surface of iron in a flowing stream generated a current. With the fundamental knowledge available to him from these early investigators, Willis Rodney Whitney developed and expressed, in its most useful form, one of the basic scientific principles which provides modern corrosion specialists with a fundamental basis of corrosion control. The acceptance of the invitation to meet in Bristol gave particular pleasure to the Local Organising Committee because it was the first time that a former venue was revisited - the 3rd Symposium was organised in Bristol by Hans Heller in 1961 and we were very glad that his widow, Josephine, was able to be the Guest-of-Honour at the banquet of our 10th symposium. Neurosecretion has diversified considerably since the first meeting in 1953. From the outset, the local committee decided to focus the meeting by organising it under the title 'Cellular aspects of the production and release of neuropeptides. ' Having sought advice from the International Committee for Symposia on Neurosecretion, we invited 28 scientists from throughout the world to present their work on aspects ranging from the organisation of the gene through to the electrical properties of peptide-secreting neurones. They have been treated as 'philosophical puzzles' to be pondered systema tically in the hope of some eventual solution. These age-old and significant issues gain renewed meaning with our advances in technology and neurosciences. I initiated the devel opment of our annual symposium Models and Techniques of Cognitive Rehabilitation, on which the present volume is based, so as to educate myself, as well as others, about the state of the art in modifying cognitive processes in the brain, injured. I became aware of the need for interventive strategies for the brain, injured while a graduate student. Brain functions had, for a long time, always fascinated me, but from an academic perspective. I was confronted with the clinical consequences of brain injury while administering batteries of neuro psychological tests, and this experience added another dimension to my interest in brain functions. I felt grossly inadequate because I was able to rather eloquently describe changes in brain-behavior relations with neuropsychological tests, but could only generate re commendations based solely on the use of compensatory strategies and occasionally on some unfounded, and probably naive, remedial guess. A literature search at this time yielded devastating, little informa tion. The next several years were characterized by a pseudo-obsession, occurring at times without total awareness, with methods and tech niques which might alter impaired brain-behavior relations.
