The protein Thaumatin is the sweetest substance known and has the additional property of enhancing the taste properties of other flavour compounds. Thaumatin is produced by the West African plant Katemfe and has been used as a traditional food by West Africans for centuries and is a desirable modern food additive. One reason why Thaunatin is not in general use is its great expense and limited production. The modern methods of genetic engineering are now being used to develop rival methods to produce Thaumatin and make it a more widely available food additive.
