Since purchasing your book before Christmas, our restaurant has changed dramatically. It is amazing how different it looks with just a few folded napkins placed in the glasses. It now looks loved and cared for. (We have chosen the 'Tulip' design). Not only has it smartened up my restaurant, but my customers have seen the book and asked for napkins so they can try some of your designs. It has become quite a talking point. I love the book the layout is fantastic and easy to understand, although I haven't tried out all the folds yet. What you wrote in your introduction is exactly how I feel, as I am more of a front of house person as well and love working and talking to people. It's putting initiative into my work that makes it all seem worthwhile. To try constantly to use my head to improve my work as I am not a creative person but I enjoy folding napkins, and who knows if I won´t create my own designs. We try to create that ´family touch´ and put little details into everything. I think its all about making a difference in peoples' lives. By producing an attractive meal or a creative napkin fold that person can leave the dining room/restaurant thinking 'somebody cares about me' and in turn I think it has a repercussion effect. --Kate, London

Luigi Spotorno has over 35 years' experience in the catering industry; he has appeared on ITV s This Morning show, in the Sunday Telegraph and London Evening Standard, and has folded napkins for the Queen's Golden Jubilee, Prince Charles' marriage to Camilla Parker-Bowles, and for opera singer Luciano Pavarotti. Born in Venice, Italy, Luigi developed his napkin folding skills at sea, working in the first class dining rooms of liners including the Canberra and Achille Lauro, before settling in London and working as a restaurant manager in some of London's most prestigious restaurants. He developed his flair for table design whilst running some of the capital s most distinguished banqueting houses. Nowadays he is a member of the Catering Managers Association and teaches catering management. He travels around the UK and Europe, demonstrating a range of napkin folds.
