L'autore:
Prof. Dr. Claus Leitzmann ist Ernährungswissenschaftler und leitete zuletzt das Institut für Ernährungswissenschaften der Universität Gießen. Seine Forschungsgebiete sind die internationale Ernährung, Vegetarismus, Vollwert-Ernährung und Ernährungsökologie. Für seine Arbeiten erhielt Leitzmann den Zabelpreis für Krebsprävention und den Preis der Broermann Stiftung für präventive Ernährung. Dr. Markus Keller, Ernährungswissenschaftler, arbeitet als freiberuflicher wissenschaftlicher Autor, Lehrbeauftragter und Dozent. Schwerpunkte seiner wissenschaftlichen Arbeit sind die Themen alternative Ernährungsformen, Vegetarismus und nachhaltige Ernährung. Er gründete und leitet das Institut für alternative und nachhaltige Ernährung.
