If you took all the Cookbooks on display in any of our local bookstores, stretched them end to end in a row heading west, you could walk to the Kona coast without having a drop of sea water on your Fila thongs, not to mention papering the Empress Hotel inside and out with just the dustjackets. So if we need another cookbook we surely need another one size fits all jumpsuit, another tennis racquet make of out some recently described trace element, or another 'no-cal' drink made with enough basic chemistry to create a neutron bomb. Hold it - these women aren't nuts, they are not running from the men in the white jackets with the big nets - they created a first class wholesale dessert business - 'Nathan's Original Cheesecakes' - out of ten pounds of sugar and a dozen pre-stamped cartons - so maybe they've just got something. Nathan's Cheesecakes originators even after the business was sold, would be flagged down on desolate stretches of the Coquihalla Highway and asked how to blend the topping of the Chocolate Kahlua Cheesecake; a bakery business so naive in its inception, yet so successful in its product and performance, that market analysts are still asking the question 'What went right?'
