By a Person formerly concerned in a Publick Brewhouse in London. The Sixth Edition. Printed for T. Astley and Sold by R. Baldwin, jun at the Rose in Pater-Noster-Row, London, 1750, 332 pp plus index, later leather binding (late 18th?), 8 x 5", 8vo. In good condition. Nicely preserved. Later 18th early 19th century leather binding has moderate wear to extremities with scuffing and dryness to surface of board. Decorative gilt ruling has slightly rubbed away, but remains bright. Dated spine with small tear at head. Lovely decorative compartments in gilt remain bright. Presents nicely on a shelf. Lacking frontis. Front gutter tender. "Fresh" end papers. Interior very good with light toning and minor instances of foxing. Relatively bright and clean. Free of known marginalia. Binding tight and intact. A solid copy. Please see photos. Extremely scarce and very important book of beer! It is one of the most important books on beer ever written, as it describes for the first time the use of scientific progress for practices that previously had been solely empirical. It explains the many aspects of the brewing process, such as malting and mashing, in technical detail, and in later editions describes how to make clear beer. For the first time, the production of pale, amber, and brown malts is described, including the effect of different types of kiln, fuel and temperature. The book also confirms that most brewers of the time had stopped using wheat for malt and were exclusively using barley. The book goes into detail the different methods of preservation as well including the use of crab claws to keep beer! Ellis advises against salt or egg whites as they may spoil the beer entirely. Brewing was best done in October as the hops and barley were "rested" long enough after harvest in August. The beer was kept until Spring, but often left until the following October, hence Octoberfest! William Ellis (1700-1758) was an English farmers from Little Gaddesden, in Herefordshire. He was the author of dozens of book, mostly on agriculture, including The Country House Wife's Companion, Modern Husbandman and The Compleat Cyderman.
