Dall'autore: What happens when a host from Iowa hits the big city? A little bit of chaos, a lot of misunderstanding, and the best dinner parties you can imagine.

Growing up in the Midwest, I thought entertaining was simple: holiday traditions, family get-togethers, a living room filled with laughter. The menu always included meat, potatoes and a Jell-O mold. We would sit and relax for hours telling stories and playing games.

So when I attended my first New York City wedding during graduate school, my jaw hit the floor: women pushing me aside to get to the cheese display; men hovering near the kitchen to be the first to grab hors d'oeuvres! I had never seen anything like it. And I never wanted to leave. There was a hunger, a passion--not just for the food itself--but for what the entire occasion represented. Entertaining was an art, an object of conversation, and an expression of social grace.

I moved to the East Coast and decided to learn those skills. I waitressed at an upscale restaurant. I studied wines and food presentation. I watched countless TV cooking shows, practicing recipes and taking tips from their creators. But the dinner parties I hosted never seemed as glamorous. And I spent more time in the kitchen worrying about my guests than in the dining room enjoying their company.

That's when I remembered those early days around my grandmother's dining table: my mother going out of her way to make my favorite apple pie; the simple joy of connecting with those whom I loved. And that's when I realized that elegance is more than place settings. That grace must be practiced in order to be learned.

Today I strive to bring the best of both of my traditions to the table. I'm meticulous about the menu and décor, but equally focused on creating an environment that is intimate and engaging. I often spend days in the kitchen preparing for a party, so that I can spend hours around the dinner table sharing with my guests. I've come to discover that entertaining should be memorable and hosting meaningful. That good conversation is as important as good food. And that creating opportunities for family and friends to gather is always reason to celebrate.

Your Gracious Host,
Deborah Greenspan
