Excerpt from A Study of the Diet of the Labouring Classes in Edinburgh: Carried Out Under the Auspices of the Town Council of the City of Edinburgh
The authors desire to record their indebtedness to the Town Council of the City of Edinburgh who, upon the recommendation of the Committee of Public Health, granted the sum of fifty pounds towards the expenses of these investigations. They believe that this is the first occasion upon which a Municipal Authority has in such an enlightened manner manifested its interest in the well-being of the poorer citizens, and they venture to hope that the example of Edinburgh will be followed by other Urban and Rural Authorities, and that in this way a wider know ledge will be gained of that most important factor in the pros perity of a community, the food supply of its labouring classes.
