As there is scarcely an English family among the higher or middle classes, who does not number among its members a retired military or civil servant of the East India Company, or a retired naval officer or commercial man, it has been thought advisable to introduce a considerable chapter on Anglo Indian cookery. This, it is thought, is the most complete system of Indian cookery ever presented in a connected form.
Neither the Spanish, the Portuguese, the Russian, nor the Polish cookery are deserving of general commenda tion but certain national dishes and soups, which have obtained a more general vogue, are preserved under their respective heads. Among the Dutch and German receipts will be found some worthy of attention and adoption.
