Sinossi

Narrowing of the blood vessels to the heart, the coronary arteries, is the commonest cause of serious illness in the Western world, especially as adults enter their 40s and 50s. Fortunately, this epidemic is very largely remediable, even if the experts argue about the best remedy. There is little doubt that the risk of coronary disease is slashed by giving up smoking and by reducing the amount of fat in our diet. The type of fat which gives rise to cholesterol in our body is consumed mainly as red meat and dairy food, and a change to a diet which minimizes the intake of such foods will reduce the cholesterol level in the body by up to a quarter, even in most indiviuals who feel (or have been told) that it is their genes rather than their diet which controls their cholesterol. This fall in cholesterol may be estimated to halve the risk of heart disease, The first half of of this book explains and illustrates very simply how coronary disease occurs, and why simple dietary measures can be so effective. The second half of the book contains low fat recipes, and shows how pleasurable such a change can be, and more than counters the dieter's concern that eating will come to lack the variety and surprise.
