This book is about some of the wonderful dishes my sisters and myself had at home when we were growing up. Simple and on the table fast. 'Like My Mamas Enchilada Casserole'
"My mother sure knew how to make this dish, and it turned out perfect every time."
1 sm. can tomato sauce 2 lbs. hamburger 1 onion (chopped small) 1 can cream of chicken soup 1 can Las Palmas enchilada sauce 1 can pitted olives (sliced) 1 pkg. corn tortillas 1 1 oz. can Mexican Green Sauce. Salsa Verde 1 lb. grated mild cheese 1.87 oz pkg. Enchilada Mix 1 14 oz. can Nalley's Chile
Fry hamburger to light brown; add onion heat through, add enchilada mix, and the Salsa Verde mix and heat through, add soup. Lightly oil bottom of large casserole. Dip tortillas in tomato sauce and arrange by single layers topped with some meat mixture, cheese. Make several layers. Pour can of chili on top and spread, add cheese, and olives. Bake at 350 degrees 45-60 minutes. Serves 10-12

'My Favorite Peanut Butter Cookies'
"I always have to make these for my husband, they are one of his favorites"
1 cup shortening 1 cup granulated sugar 1 cup brown sugar 2 eggs 1 teaspoon vanilla 14 oz. can Sweetened Condensed milk 3 cups sifted all purpose flour 2 teaspoons soda 1/2 teaspoon salt
Thoroughly cream shortening, sugars, eggs, sweetened condensed milk and vanilla. Stir in peanut butter. Sift dry ingredients, stir into creamed mixture.
Drop by rounded teaspoons on ungreased cookie sheet. Press with back of floured fork to make a criss cross.
Bake in oven (350 degrees) about 10 mins. (depending) on your oven, be careful not to burn.
"For richer cookies use 2 cups flour"

'Sweet-Sour Meat Balls'
"We had these for dinner only with company, not too often"
5 slices dry bread 1/2 cup grated onions 1/4 tsp. pepper 2 eggs, slightly beaten 2 lb. ground hamburger 1/2 tsp. garlic salt 1 tsp. salt
Sweet-sour sauce: 1 (12 oz.) can tomatoes (about 3 1/2 cups) 1/4 cup vinegar 1 tsp. grated onion 1 cup brown sugar, firmly packed 1/2 tsp. salt 10 gingersnaps, crushed
Cut bread in cubes. Soak in a little cold water until soft. Squeeze out water. Combine with the remaining ingredients except Sweet-Sour Sauce. Shape in balls the size of walnuts. Place in 15 1/2 x 10 1/2 x 1 inch jellyroll pan. (I like to brown the balls in a skillet containing a little hot oil). Bake in a very hot oven 450 degrees, 15 to 18 minutes. If balls are made ahead, add sauce to them and heat in the oven. Makes about 36 meatballs, 8 to 9 servings
Sweet-Sour Sauce: Combine all ingredients. Cook to boiling. Add baked meat balls and simmer 10 minutes. Makes enough sauce for 36 (1 1/2 inch meat balls)

'Cube Steak Haystacks'
"These were always good for any easy Saturday night meal. Fast and simple."
1 pkg. hash brown potatoes 2 tbsp. shortening 6 beef cub steaks 1/2 tsp. salt 2 tsp. catsup 1 (4 oz.) pkg. shredded cheddar cheese
Prepare hash browns as directed on package. Set hash browns aside.
In another large skillet, melt shortening. Place the steaks in skillet and cook over medium heat 3 to 5 min. on each side or until brown. Take skillet from heat. Season each steak with salt. Then spread each steak with 2 tsps. catsup. Top each steak with 1/2 cup of the cooked hash browns, then top each with 1 to 2 tablespoons shredded cheddar cheese. Return skillet to heat, cover and cook over low heat 2 to 3 minutes or until cheese is melted.
Makes 6 servings.

'Beerock Pie'
"My mother cooked cabbage all the time, and I can still smell it to this day. She made separate beerocks and I started making it as a pie, does not take as much time."
1-4 lb. chuck roast, Cut in small chunks 1/4 tsp. garlic powder 1 tsp. pepper 2 heads cabbage, cut in thick strips 1/2 tsp. salt
Pastry: 3 cups flour 1 cup shortening 1 1/2 tsp. salt 7-9 Tbsp. cold water
In Dutch oven, place meat, garlic, pepper and enough water to cover. Cook over low heat about 2 hours. Remove meat; add cabbage and salt to the broth, cover and cook 10 min. R move fat from meat and shred into small pieces. When cabbage is done, drain all but approximately 1 cup. Add the meat to cabbage.
In a small bowl, combine 1/2 cup flour and 3/4 cup cold water. Add enough of this paste to the meat mixture to make the liquid in to an extra-thick sauce. Season with salt and pepper to taste.
Prepare pie pastry: Take 2/3 of the dough and roll out a rectangle large enough to fit bottom and sides of a 9x13 inch dish. Pour in meat mixture. Roll out remaining pastry and fit on the top. Cut slits in top crust. Bake in a 425-degree over for 20 to 25 minutes.
Makes 6-8 servings.

My Hot Roll Kalzonies'
"Every time we went to an Italian restaurant my husband would always want this dish, so I said I can make this, and I did."
1 lb. ground beef 1(4 oz.) can tomato paste garlic salt to taste Grated Jack cheese 1 pkg. Pillsbury hot roll mix
Prepare hot roll mix according to directions on box. While dough is rising, brown ground beef; add tomato paste and garlic salt. Simmer for 2 minutes. Set aside and let cool.
Grate cheese:
When dough has doubled (30 minutes to 1 hour) divide into 12 balls. Roll ball out to approximately 5 or 6 inches around. Put spoonful of meat mixture in center, sprinkle cheese over this, fold on side of dough over and then the other; seal. Roll up ends and seal. However you make the shape of the Kalzonie, be sure you have sealed meat inside before frying.
Put 1/2 inch cooking oil into skillet and heat. Fry Kalzonie, one or two at a time, on both sides. Make sure oil does not get too hot or dough will not have time to cook through before outside is brown. Drain on paper towels and serve.

'Coconut Cream Pie'
"My mother made the best coconut cream pie, it would just melt in your mouth."
2/3 cup sugar 3 1/2 Tbsp. cornstarch 1/2 tsp. salt 3 cups milk
Mix in saucepan and cook over medium heat or in a double boiler until thickened, boil 1 minute. R move from heat. Gradually stir at least 1/4 of hot mixture into 3 egg yolks, lightly beaten. Then blend into hot mixture in saucepan. Boil 1 minute or until thick, stirring constantly. Remove from heat and blend in:
1 Tbsp. butter 1 1/2 tsp. vanilla 1 cup coconut
Pour into cold pie crust. Cover with meringue and a little coconut on top and brown.
Meringue:
1 Tbsp. cornstarch 2 Tbsp. coldwater 1/2 boiling water 1 tsp. vanilla 3 egg whites 6 Tbsp. sugar dash salt
Dissolve cornstarch in coldwater. Stir into boiling water, cook, stirring until mixture boils and thickens. Cool completely. Beat egg whites until fluffy on high speed of mixer. Gradually add sugar, salt and vanilla while continuing to beat until mixture is thick and glossy. Reduce mixer speed to medium, add cornstarch mixture gradually, continue to beat until smooth. Spread on pie, making sure meringue is sealed to edges of pie. Bake at 350 degrees 20 minutes or until evenly brown.

'My Chick y Chicken Pot Pie'
"I make this often, but it never turns out the same way every time, and it is so simple"
4 large potatoes (diced) Few frozen peas 1 large yellow onion (diced) 2 sticks celery (diced) Few green beans 1/4 tsp. celery seed 4 chicken breasts 1 can cream of chicken soup chicken broth Add salt and pepper to taste
Gravy:
3 Tbsp. butter 2 1/2 cups chicken broth 3 Tbsp. flour
Cook above ingredients about 20 minutes or until nearly done. Cook chicken breasts using several cups of chicken broth. Cool and bone and dice. Spread in bottom of large baking dish, add cream of chicken soup on top of the chicken and spread out.
Gravy:
Mix butter and flour together in skillet, then add chicken broth and cook together. Season; mix gravy with vegetables and pour on top of chicken. Cover with pie crust. Bake at 425 degress 1/2 hour. Use large-sized Pyrex dish.

Baked Chicken That Makes Its Own Gravy'
"This is very good for a change from fried chicken."
3-3 1/2 lb. frying chicken pieces 1/4 cup flour 1/4 cup melted butter 2/3 cup (small can) undiluted evaporated milk 1 (10 1/2 oz.) can cream of mushroom soup 1/2 tsp. salt 1 cup grated American cheese
1/8 tsp. pepper 2 cup (1lb. can) drained whole onions 1/4 lb. sliced mushrooms Dash paprika
Coat chicken with flour; arrange in single layer with skin down in melted butter in 13x9x2 inch baking dish. Bake, uncovered at 425 degrees 30 minutes. Turn chicken; bake until brown, 15 to 20 minutes. Remove from oven and reduce temperature to 325 degrees. Pour off excess fat. Add onions and mushrooms to chicken. Combine milk, soup, cheese, salt and pepper. Pour over chicken. Sprinkle with paprika. Cover with foil. Return to oven and continue baking 15-20 minutes.

'Mamas Carrot Cake'
This is one of my favorite cakes my mother made, with cream cheese frosting. Wow!!
1/2 tsp. salt 1 1/2 cup oil 2 cups sugar 4 eggs 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon 2 cups flour 1 tsp. vanilla 3 cups carrots, grated
Mix oil, sugar and vanilla together, add eggs, one at a time; beat until creamy. Then add carrots. Makes a 3-layer cake. Bake at 350 degrees about 35 minutes. Frost with Cream Cheese Icing.
Cream Cheese Icing:
1 8oz. cream cheese (softened) 2 cups powered sugar 2 tsp. vanilla 1/2 cup butter
Mix well: Frost

'Good Old Flour Biscuits'
"As long as I can remember, my grandmother always had this mix stored in jars and cans in her cupboards. We had biscuits just about with everymeal."
Biscuit Mix
6 cups flour 1 Tbsp. salt 1/4 cup. Sugar 3 Tbsp. baking powder 1 cup Crisco shortening Mix well store in cool place
For 6 Biscuits
1 cup. Mix 1/4 cup milk
For biscuits, mix well and turn on floured board. Knead lightly. Roll out and cut, I use a glass dipped in flour, then place on greased pan. Bake at 425 degrees for 15 min. or until brown.

'German Sweet Chocolate Cake'
My grandmother made the best cake I have ever eaten, she just had that tough, and turned out right every time.
1 (4 oz.) Bar Baker's German sweet chocolate 1/2 cup. Boiling water 1 cup butter 2 cups sugar 4 egg yolks, unbeaten 2 1/2 cup flour 1 tsp. vanilla 1 tsp. salt 1 tsp. baking soda 1 cup buttermilk 4 egg whites, stiffly beaten
Melt chocolate in water, I put it in a double boiler on the stove, let cool. Cream butter and sugar until fluffy, add egg yolks, one at a time, beating well after each one. Add melted chocolate and vanilla; mix well. Sift together flour, salt and soda; add alternately with buttermilk to chocolate mixture, beating after each addition until smooth. Fold in egg whites. Pour batter into three 8 or 9 inch layer pans. Line the bottoms with waxed paper. Bake at 350 degrees for 30-40 min. Cool
Coconut Pecan Frosting 1 cup evaporated milk 1 cup sugar 3 egg yolks 1/2 cup butter 1 tsp. vanilla
Combine and cook over medium heat until thickened, about 12 min.
Add: 1 1/3 cup coconut flakes 1 cup pecans (chopped)
Beat until thick enough to spread on cake
This cake is delicious

My Good Oh' Sugar Cookies'
"My mother and grandmother made these cookies once a week, because they are so easy, and they are still the best"
2 1/2 cups all purpose flour 3/4 tsp. salt 1/2 tsp. baking soda 1/2 cup butter or margarine 1/2 cup vegetable shortening 1 cup Granulated Sugar 1 tsp. Vanilla 14 oz. can Sweetened Condensed milk 1 egg 2 Tbsp. milk
Sift dry ingredients together and put in a separate bowl sit aside. Cream butter shortening and sugar until light and fluffy. Add egg, sweetened condensed milk, and vanilla. Beat in dry ingredients until smooth. Blend in milk. Drop by tablespoons about 3 inches apart onto a greased cookie sheet.
Bake 10 to 12 min. (depending on your oven) in a preheated 350 degree oven until lightly browned. Makes approximately 3 dozen.

"My Oh' So Good Peanut Butter Candy"
I grew up with delicious candy my mother and grandmother made every Christmas, it was the best thing I thought we had, and was the only time it was made. A good memory.
2/3 cup Peanut Butter (creamy) 3 cups sugar 1/8 teas. Salt 1 1/2 cups Evaporated milk 1/4 butter pat 1 teas. Vanilla
Thoughly combine first 3 dry ingredents in a heavy saucepan, I use a large skillet, stir in milk, bring to a bubbling boil on med. heat stirring constantly. Boil without stirring to 234 degree F (softball stage). Bulb of candy thermometer should not rest on bottom of pan. Remove from heat, add the pat of butter or margarine and vanilla. Stir, cool at room temp. 110 degrees F. Beat until candy thickens and loses its gloss. Quickly spread in a lightly buttered 8 or 9 inch pan. Cool, makes 3 dz. Squares. This is still the best candy I have ever ate.

'My Fabulous Mashed Potatoes'
This is my mixture, and boy are they good. Russet Potatoes-Desired amount 2 sticks of butter 2 Large Tablespoons of Mayonaise (I use Best Foods) Salt-To Taste Pepper - I really add a lot of pepper. Milk - As desired, do not make mushy.
Cut potatoes in chunks, boil for about 10 minutes, do not let them get mushy, drain water out when cooked. Add butter let melt, whip with electric mixer, add mayonnaise, salt and pepper. Whip until creamy

'Finger Jello It's Great'
I made these for my children when they were little and my mother made them for me. I like to put on top of my salad or just eat alone.
1 cup sugar 1 cup cold water 4 cups hot water 4 pkg. knox gelatin 3 pkg. (2.9 oz) jello (any flavor) 1 cup whipping cream
Mix sugar, knox gelatin and hot water, add the jello mix, add cold water. Mix well. Add whipping cream and mix well. Put it in the refrigerator and let set. Cut into squares and serve.

'My Easy Tamale Pie'
"This is so easy for a fast dinner on a busy day. I have this one very often"
1 lb. hamburger 1 (16 oz.) can tomatoes (chopped), undrained 1 (12 oz.) can whole kernel corn, undrained 1 (8 1/2 oz.) can creamed corn 1/2 cup corn meal 1 1/2 tsp. salt
1/4 tsp. garlic salt 1 tsp. chili powder, if desired
Top: 1/2 cup corn meal 1/2 cup flour 1/2 tsp. salt 1 1/4 tsp. baking powder
1/2 cup milk 1 egg 3 Tbsp. melted butter
Brown hamburger meat: and drain the fat. Add tomatoes, corn, corn meal, and seasonings. Simmer uncovered, 10 minutes. Pour into a baking dish. Mix topping and pour over hamburger mixture. Bake at 350 degrees until topping is brown, about 30 minutes. Serve with a green salad - yum!

Yummy Sugared Walnuts'
"A good holiday sweet"
1 cup brown sugar 1/2 cup granulated sugar 2 Tbsp. light Karo syrup
1/4 cup milk 1 Tbsp. butter 2 or 3 cups walnuts
Cook brown sugar, granulated sugar, Karo syrup and milk to a soft ball stage. Then add butter and vanilla. Beat this until creamy. Add walnuts. Stir until well coated. Put into greased pan and separate. Put in 350 degree oven for about 8-10 mins, keep turning over. Check often. Let cool.

'Good and Yummy Rice Pilaf'
"Rice is always good, plain with just butter, or with milk and sugar, or seasoned."
1 cup long grain rice 1/2 cup vermicelli 1 cube butter 3 cups chicken broth
Melt butter in shallow pan; break up vermicelli into pieces and fry in butter until slightly browned, stirring constantly. Add rice to vermicelli and suate them together for a few minutes, always stirring. Then add boiling broth, salt and pepper to taste. When boiling, cover and put burner on low. Cook for 20 min. or until broth is all absorbed and rice is tender. Take off fire and let rest for about 1/2 hour before serving.
Serves 4-5.

'Good Potato Pancakes'
This is another dish I grew up with. Every time we had mashed potatoes and than there was a lot left over, this is one of the sides my mother made with them.
Left over cold mashed potatoes 1 egg Salt and pepper to taste Yellow onion (chopped) Sprinkle or 2 of flour Oil for frying
Heat oil to good and hot, mix first 5 ingredients well. Spoon balls into ready hot oil and flatten slightly, turn when crispy on one side and the other. Drain on paper towel. Serves depending on amount of mashed potatoes you have.

'Scalloped Potatoes and Pork Chops'
"This is a good one, you can use pork chops or chicken"
1/4 cup melted butter 1/4 cup water 4 lean pork chops
1/4 cup dry onion soup mix 1 tsp. salt 8 medium potatoes, peeled and sliced
Put water in bottom of casserole dish; combine butter and onion soup. Layer potatoes and rest of onion soup mix 3 times. Cover with pork chops, salt and pepper to taste. Cover and bake 1 hour at 350 degrees. Serves about 4
