Dans une 1ère étape du travail, les caractéristiques physico-chimiques chez deux races ovines algériennes: la race Hamra et la race Ouled Djellal élevées au niveau de l'ITELV de Ain Hadjar (Wilaya de Saïda). Les analyses ont porté sur: pH, densité, point de congélation, matière grasse, protéines, ESD, EST. Les résultats obtenus pour ces paramètres ne montrent pas de différences significatives entre races. La 2ème étape, nous avons utilisé la précipitation à pHi des caséines (pH 4,6). Les fractions ont ensuite été contrôlées par électrophorèse sur gel polyacrylamide dans différentes conditions (native, Urée et SDS). Les profils résultants ont permis d'identifier des analogies entre le lait de deux races. Des particularités liées aux protéines sériques ( La et beta Lg) et s1-caséines sont révélés par rapport au lait de bovin. 184 pp. Französisch.
