Octavo, beige wrappers, [4], 134 pp. Sixth edition (first published 1879) of this important Hawaiian community cookbook. The preface notes that one of the goals of the cookbook was "to feature cookery of Hawaiian food products", and so the text contains many recipes making use of bananas, papayas, alligator pears, breadfruit, taro, coconuts, mango, guava, and more. There are many American recipes that make use of these ingredients, such as sliced papaya pie, banana pudding, mango jelly, and mango brown betty, and a recipe "to prepare cocoanut juice for gravies." Additionally, the book contains recipes with a Hawaiian influence, including six recipes for taro (including taro cakes, boiled taro, fried taro, and "ha-ha"), four recipes for breadfruit (including stewed and baked breadfruit), poi cocktail, and mashed kalo. One section, titled "Hawaiian Fish: How to Cook Them" prints a reference chart of local fish, and is followed by a series of fish recipes, many making use of the native Hawaiian names for various fish species, i.e. "Aawa", "Akule," "Hee or Squid," etc. A section at the end of the book prints luncheon recipes and menus, including "A Hawaiian Feast 'Ahaaina' Or More Commonly Called 'Luau'" (2 pp), "Kulolo, Something Good", "Poi Luncheon Cooked Over An Ordinary Fire Or With A Fireless Cooker," and "Curry Luncheon," noted in the text as "essentially Hawaiian." Finally, the book contains much in the way of standard American fare, as well as recipes titled "Fish Moultee (Indian Recipe)" and "kohl-rabi (Chinese turnip)."
