Written just before the passage of the Pure Food and Drug Act, the author examines the complaints filed against the local health department to summarize the issues surrounding this vital food source…at the time, including the use of preservatives, feeding cows brewery by-products, and a possible milk famine in the District of Columbia. The author concludes that new regulations for the Districtâs milk supply were needed, especially regarding the tuberculin test, pasteurization, bacterial content, and a maintenance of low temperature. These regulations would increase the price for consumers but would not prohibit milk consumption and would ensure a better quality of milk overall. This book is a reproduction of an important historical work, digitally reconstructed using state-of-the-art technology to preserve the original format.
