From the Preface --- Readers have asked me to include their favorite vegetables in this my second book. Therefore, in this book I picked out some vegetables which aren't so familiar to most of us, such as the Dog-tooth Violet, Comfrey, etc. Japan is a rich country for vegetable production and, especially in Kyoto, there has been a great variety of vegetables from olden days, cultivated along with the history and culture of the area. These vegetables have served to create the food culture of the region in its special geographic position, surrounded by mountains. Beside these traditional green vegetables, there are many other kinds now being raised in Kyoto, including the ones imported from Europe in the Meiji Period. Vegetables are sown and raised by people. It might seem therefore that it would be easy to see their flowers, but, because most are harvested before they bloom and considering the recent trend towards farm lands being rapidly covered by housing projects, it is not that easy. If land development continues in this way, I am very afraid that eventually the day will come when we can't see any farm land at all. Just like insects, fish and grass which have disappeared through the destruction of the natural environment, one day dump trucks will carry away the top soil and even our vegetables will disappear from the countryside. It is a sad thought. I made this book in order to put our vegetable flowers on record as well as to show their beauty and charm.
