And few, if any, can resist following such advice once they have tasted the delicious food of the Pennsylvania Dutch, such as sauerkraut und speck (sauerkraut and pork), smearcase (cottage cheese) and schnitz und knepp (dried apples and dumplings). Prior to 1935, most of the recipes for Pennsylvania Dutch cookery had been passed from generation to generation from mother to daughter, by word of mouth. Realizing the need for recipes in written form, J. George Frederick decided to compile a cookbook entitled PENNSYLVANIA DUTCH COOKERY that would "keep Pennsylvania Dutch cookery from falling into oblivion." He also wanted to tell the "fully rounded story of the Pennsylvania Dutch." So, in addition to numerous recipes and anecdotes about Dutch food, Frederick also included in his book a section about the history of the Pennsylvania Dutch, their arts and crafts and their contributions to this country. The Pennsylvania Dutch came to this country before 1700. The term "Pennsylvania Dutch" is a colloquialism for Pennsylvania German. These people brought with them the very best of German cooking and then adjusted it to the foods and conditions they found in America. The Pennsylvania Dutch are a thrifty people and their cookery reflects their way of life. Many dishes common in today's Dutch cookery were created when a housewife (hausfrau) felt that she could use, rather thatn discard, leftovers. ~The food of the Pennsylvania Dutch is abundant and hearty. The art of traditional cooking has been passed from generation to generation. It is only with PENNSYLVANIA DUTCH COOKERY that many of these recipes became standardized and written down for others across America and the world to enjoy.
