The Indian Dairy Industry has experienced a sea change during the 20th century it has emerged from a developing to a developed dairying nation. India achieved the laurel of being the highest milk production in the world. Almost all the regions of the country have greatly contributed barring a few pockets where milk production has not kept pace in the increasing order. The eastern region in India has not made an impressive gain in milk production. Besides the tremendous growth in the milk production processing value addition and marketing there has been a quantum jump in the dairy machinery manufacturing ancillaries and packaging industries. Agri-business has become a key business globally and India has several competitive advantages in this area. Besides with the continuous in ethnic population though out the world, there has been a considerable growth in demand for the ethnic foods especially the Indian dairy products. Significant opportunities are now emerging for enhancing organized milk production processing and marketing. The government policies over the years are becoming congenial for investment in the dairy sector. The dynamics of present scenario calls for a protecting visionary approach in diary sector. There is a need to sensitize farmers in the eastern and north eastern region and adjoining stats to adopt scientific diary farming on a large scale in order to improve their socio-economic status. With the aforesaid objectives this book entitled strategies for production processing and distribution of milk and milk products is written which is based on the works and findings of different eminent scientists working in the dairy farming and milk processing sectors with a view to familiarize these recent knowledge and technology development amongst the scientist, teachers students, farmers and finally the consumers not only in Indian society but in the global context also with the objectives to make use of these efficiently to enhance and optimize the productivity in dairy industry.
