Viele Forschungsarbeiten befassten sich mit den Polyphenolen unter dem Gesichtspunkt ihrer antioxidativen und antikarzinogenen Wirkung. Obwohl viele Untersuchungen mit verschiedenen physikalischen Techniken durchgeführt wurden, ist der genaue Mechanismus der Interaktion zwischen den Molekülen der Polyphenole und den Membranlipiden noch nicht aufgeklärt. L'approccio del nostro lavoro si basa su due fasi: la prima è testare l'efficienza di incapsulamento dei liposomi nei polifenoli. Ziel dieser Arbeit ist es, in vitro den Mechanismus der Interaktion zwischen den Molekülen der Epigallocatechin-Polyphenole und der durch Liposomen repräsentierten Zellmembran zu untersuchen. Der Ansatz unserer Arbeit basiert auf 2 Phasen: Erstens wird die Verkapselungseffizienz von Liposomen für Polyphenole getestet.
