It is used by the grower who manages his production techniques to produce a quality product; by the marketing man who uses the word to determine the value of the crop and the price at which it is to be sold; by the wholesaler who bases his prices on quality; and by the consumer who decides whether or not to pay for quality. This book sets out to present, in a readable form, the characteristics by which the quality of a horticultural product can be assessed and to discover how they apply to the many markets to which horticultural crops are sent.Much of the text is concerned with the definition of and weighting accorded (for particular products) to the following quality-determining factors: nutritional value, colour, texture, condition, size, shape, form and style, yield, flavour, plant health, processing quality and seed quality. The way in which each of these factors applies to various horticultural crops is discussed with reference to the methods by which it can be measured and world grading systems in which the particular factor is of importance. This book, written in terms familiar to horticulturalists and food technologists, will be a valuable source of information not available elsewhere for students of horticulture and for those in the food industry particularly concerned with fresh, pre-packed and processed fruits and vegetables.
