The study primarily focuses on the formation and proportion of normal end products of digestion, specifically proteoses and peptones. As part of this comparison, the author examines the impact of removing digestive products on the activity of the ferment. Utilising an apparatus with a loop of parchment tube suspended in dilute acid and a larger surrounding cylinder, the author finds that artificial digestion experiments do not fully mimic natural gastric digestion, and that the lack of complete peptonization in artificial gastric digestion is not due to accumulation of products of digestion. The text concludes that complete peptonization is not a necessary feature of gastric digestion, either in the artificial or natural processes, but instead that gastric digestion is a preliminary step to the more profound changes characteristic of pancreatic digestion.
