It lists his Chinese Maid recipes for chop suey, chow mein, eggs foo yong and rice, as well as salads. The company was owned by Tom Y. Chan (1881-1944), a Chinese immigrant who settled near Chicago and made a fortune opening businesses and supporting the Nationalist Chinese in their war against Japan.
