Dembo accentuating the advantages of kosher butchering, highlighting the safety of this method, including the fact, that it is a method causing the least pain for the animals. The work is subdivided into three main chapters: 1. butchering from the humanitarian viewpoint, 2. the hygienic viewpoint, these include the process of kosher butchering, bleeding, the physical and chemical characteristics of muscles, and the quick removal of the blood during kosher butchering. Also discussed in these chapters are the effects of soaking the meat in water, etc. The final chapter elaborates on the economic impacts of various methods of butchering. The work is based on a lecture, given at the Society for the Prevention of Cruelty to Animals in St. Petersburg in January 1891. Illustrated with two lithographic plates depicting the head of an ox killed by a stab into the neck, demonstrating the effect of this method, including the injuries to the medulla. Text in German.
