Dieses Buch g…ibt eine Einführung in die Maillard-Reaktion, den Prozess der Bildung von AGEs und ihre schädlichen Auswirkungen auf die menschliche Gesundheit. Da AGEs unerwünschte Krankheiten oder Störungen verursachen können, ist es notwendig, AGEs-Inhibitoren zu erforschen, um einen potenziellen therapeutischen Ansatz für die Vorbeugung von diabetischen oder anderen pathogenen Komplikationen zu bieten. Typische wirksame AGE-Inhibitoren mit unterschiedlichen Hemmmechanismen werden in diesem Buch ebenfalls vorgestellt. Synthetische Verbindungen, Naturstoffe und Nanopartikel wurden als Hemmstoffe gegen die Bildung von AGEs untersucht. Die molekularen Docking-Studien zeigen, dass die Maskierung von Lysin- und Argininresten einer der möglichen Mechanismen ist, die für die starke Antiglykationsaktivität verantwortlich sind. Die Nebenwirkungen synthetischer AGEs-Inhibitoren geben jedoch Anlass zu ernsthaften gesundheitlichen Bedenken. Daher sind natürliche Produkte vielversprechender, um als potente AGEs-Inhibitoren entwickelt zu werden.
