It emphasizes fresh, high-quality ingredients, attractive presentation, and approachable sophistication, reflecting Corbitt?s reputation for elevating Texas dining beyond traditional fare. Helen Lucy Corbitt (1906?1978), born in Benson Mines, New York, graduated from Skidmore College in home economics and worked as a hospital dietitian in New Jersey and at Cornell Medical Center before moving to Texas around 1940. She taught catering at the University of Texas, ran dining at the Houston Country Club and Austin?s Driskill Hotel. From 1955 she directed Neiman Marcus food services, notably the Zodiac Room, for about 14 years. The first woman to win the Golden Plate Award (highest food-business honor) and received 1969 Texas Restaurant Association Outstanding Service Award, she pioneered fresh, inventive cuisine (Texas Caviar, poppyseed dressing) and authored numerous cookbooks; a 1975 Chicago Tribune profile called her *the Balenciaga of food* and Texas Monthly named her 1999 *Tastemaker of the Century,* and a 2009 Los Angeles Times piece described the *Julia Child-like cooking celebrity with a Texas twang.*.
