Paperback. Condizione: New. Print on Demand. This book analyzes the viability of single-product vegetable freezing plants in the Southern United States, a region where vegetable production is historically oriented toward fresh market outlets. Statistical models of five plant capacities and three season lengths, as well as two raw product prices and three finished product prices, are used to determine the profitability of hypothetical freezing operations for six vegetables. Authoritative analysis of economies of size, season length, and product prices in their impact on costs and returns from processing green beans, lima beans, leafy greens, okra, southern peas, and squash is applied to each of the 30 unique plant models. The author finds that green bean freezing plants are the most profitable of the six vegetable types, and that all of the vegetables but squash are likely to be profitable under certain combinations of plant size and prices. This book will be of interest to food processors and agricultural economists, and its findings will have implications for producers and policymakers interested in this important agricultural sector in the Southern United States. This book is a reproduction of an important historical work, digitally reconstructed using state-of-the-art technology to preserve the original format. In rare cases, an imperfection in the original, such as a blemish or missing page, may be replicated in the book. print-on-demand item.…
