Das von Natur aus reichlich vorhandene Polysaccharid Chitin wurde aus dem Panzer der Riesengarnele durch Entmineralisierung und Deprotenisierung extrahiert. Anschließend wurde die geringe Menge des extrahierten Chitins durch Deacetylierung in Chitosan umgewandelt. Das Vorhandensein von Chitin und die Qualität von Chitosan wurden durch chemische Tests und Löslichkeitstests überprüft. Die Konzentration von Chitosan in Essigsäure wurde notiert. Es wurde festgestellt, dass das extrahierte Chitosan in einer 1%igen Essigsäurelösung leichter löslich war, was zeigte, dass das Chitosan in reiner Form vorlag.
