This is a rare early edition of (per its full title) "A Reference Book for all Interested in the Arts of Brewing and Malting." The book was compiled by German-born Emil Schlichting, who served as president of the New York-based National Brewers' Academy and Consulting Bureau. The organization helped develop brewing science in the United States, offering educational training as well as laboratory consulting. Schlichting graduated from Columbia University's College of Pharmacy in 1894, studied food chemistry in Munich and worked in the Bureau of Chemistry for the U.S. Department of Agriculture along with managing the Academy. A "prefatory apology" to this "little volume" noted that the editors "neither proclaim nor offer it as a substitute for existing textbooks" but instead offer "practical points for practical people who have little time to sit down and work out complex problems." The book includes a vast array of data and instructions for brewing and analyzing excellent beer, with tables on the "composition of water supply of various localities," tips for ingredient storage, mashing and bottling, facts on filtering and preferred proportions. Charts confer on "calculating the total average yield," converting weights and measures, temperatures and atmospheric pressures. It has a glossary of "electrical definitions" and a very useful thorough index. There are also several pages of great ads, many of them illustrated, for manufacturers of equipment and accessories like a "self-acting rinsing and scrubbing machine" and "brewers' tasteless caramel." Interestingly (to us, anyway), former owner George Laurer was born in Bavaria, Germany, which may help explain his love for beer. Rare. OCLC shows two physical holdings, only one of which is in the United States. A later version was published in 1933 and appears at eleven institutions.…
