Aufbauend auf mitteleuropäischen Fallstudien analysiert das Buch die Rolle des Wissenswandels und der neuen naturwissenschaftlichen »Experten« von Medizinern, Chemikern, Bergbau- und Agrarwissenschaftlern für diesen Veränderungsprozess, der zumeist als »Banalisierung« des Salzes in der Industrialisierung beschrieben wurde. Damit verfolgt der Autor die weitergehende Frage nach dem Einfluss der modernen Wissenschaften auf die Vorstellungen von der »natürlichen Umwelt« und den Umgang mit ihren Ressourcen.
