En 1934 su familia se traslada a Chile. Jorge Díaz cursa estudios de arquitectura en la Universidad Católica de Chile, recibiendo su título de arquitecto en 1955. Desde 1959 se dedica activamente al teatro y en 1961 se estrenan sus dos primeras obras. En 1965 se traslada a España, donde reside actualmente. Entre sus obras destacan Réquiem por un girasol, El velero en la botella, Topografía de un desnudo y La víspera del degüello. La angustiosa conciencia de lo absurdo y la soledad del hombre frente a la paradoja son temas constantes de este teatro. El cepillo de dientes es la más conocida de las obras de Díaz. Estrenada en Chile en 1961 por el teatro ICTUS, ha recorrido los escenarios de América y Europa con extraordinario éxito de público y de crítica. Recientemente, ha sido estrenada en Nueva York. Dentro del ámbito del teatro absurdo, con matices que nos recuerdan a veces las maneras del teatro de Pinter, Díaz ha creado una auténtica pieza de teatro moderno en la que se conjugan el deseo de ternura del hombre y la enajenación que su mundo le impone.
