Ras-related genes appear to be central to the mechanism of transformation by other oncogenes and therefore constitute a focal point upon which attempts to intervene in the process of carcinogenesis will be concentrated. The present volume contains the contributions to the NATO Advanced Research Workshop on the 'The Superfamily of ras-Related Genes' held in Agia Pelagia, Heraklion, Crete, Greece, May 1991. At this meeting the leading researchers in this field carne together to discuss the most recent progress in analysis of biological function of the ras-related genes. Both desirable and undesirable flavour effects are contemplated. Furthermore, threshold values of different flavour-active compounds hav…e an important effect on the cumulative sensory properties of all foods. Meat from different species constitutes a major source of protein for most people. Although raw meat has little flavour and only a blood-like taste, it is a rich reservoir of non-volatile compounds with taste-tactile properties as well as flavour enhancers and aroma precursors. Non-vola tile water-soluble precursors and lipids influence the flavour of meat from different species. In addition, mode of heat processing and the nature of additives used may have a profound effect on the flavour of prepared meats. This book reports the latest advancements in meat flavour research. Following a brief overview, chapters 2 to 5 discuss flavours from different species of meat, namely beef, pork, poultry and mutton. In chapters 6 to 12 the role of meat constituents and processing on flavour are described. The final section of the book (chapters 13 to 15) summarizes analytical methodologies for assessing the flavour quality of meats. Although the flood of important research in this area in the past decade has resulted in many symposia, edited collections of pa…pers, reviews, contributions to scientific journals, and patents, apparently no organized presentation in book form has been forthcoming. In a closely connected way, another strong impetus for writing this monograph arose out of our research programs in the Materials Research Center at Lehigh University. As part of this effort, we had naturally compiled hundreds of references and become acquainted with many leaders in the field of blend and composite research. Perhaps the most important concept stressed over and over again is that engineering materials are useful because of their complexity, not in spite of it. Blends and composites are toughened because many modes of resistance to failure are available. Although such multimechanism processes are diffi cult to describe with a unified theory. we have presented available develop ments in juxtaposition with the experimental portions. The arguments somewhat resemble the classical discussion of resonance in organic chemistry, where molecular structures increase in stability as more electronic configura tions become available.

The Soviet Union and other countries of the socialist com munity have for many years concentrated their foreign policy efforts on clearing the dark and putrid atmosphere of the Cold War which poisoned relations between states with different social systems. Guided by the great Lenin's teachings, we have worked consistently for simple, reasonable, and realistic princi ples of peaceful coexistence, mutual respect for sovereign rights, and mutually beneficial cooperation to prevail in these relations. We have sought to counter the policy of alienation and hos tility among nations, resulting in the world balancing on the brink of war, by encouraging a transition to normal, courteous relations, to peaceful cooperation based on equality-in short, to what is now termed detente. The first day, each speaker had 25 minutes to present a position, followed by five minutes of discussion. At the end of the session there were 40 or 50 minutes of exchange on all the issues examined. Upon perusal of this bibliography, devoted to the subject of laser window and mirror materials, it becomes very apparent that the effect of the laser on materials R&D has been enormous. Several hundred papers and reports, representing millions of dollars of effort, have been promulgated over the past decade; and as new frequencies, improved tunability, higher power, and other charac teristics are achieved, we can expect even greater demands and requirements on the materials com munity. What are some of the highlights disclosec by this bibliography with regard to work already ac complished First, one can note the extensive investigations into developing new materials while at the same time improving old ones. Among the latter, alkali halides, for example, have essentially had a rebirth. I n the past five years more progress has been achieved in the chemical and structural perfec tion of this class of materials than in the entire preceding century. The method of dismantling a complete object into its parts so that it can be studied has found its widest and most suc cessful application in biology and, in particular, in the study of living cells. The cytologist studying a cell will usually have to examine its fragments, which may be dead or semiliving. In sec tions of killed cells, with the aid of the light or electron micro scope he tries to obtain some idea of the structure of the living cell. As he investigates fractions isolated from a tissue homog enate, or substances isolated from individual cells, he tries to discover the biochemical functions of the cell organoids and their components. In every case the study of degradation products of the cell (depending on the degree of degradation these may be iso lated nuclei, nucleoli, nucleolar ribosomes, ribosomal proteins and RNA, mitochondria, fragments of mitochondrial membranes, and so on) makes its own contribution to knowledge, and the infor mation obtained on different objects is mutually complementary. The measured spectral luminance of a rock outcrop rela ti ve to the lumi…nance of a standard is the basic property considered in this method. The spectral luminance factors p are measured by means of special instruments - a universal photometer, cinespectrograph, spectro visors, and other spectrometers. The measured values of P' of the investigated rocks are interpreted geologically with the aid of some methods of mathematical statistics so that a means of lithological mapping of sandy deposits from the air can be found. The importance of developing a method of determining the type composition of rocks, primarily sandy de posits, from the air stems from the extensive occurrence of deserts on the earth's surface. Sandy deserts occupy vast areas in the southern latitudes of the USSR and occur in western and central China, Pakistan, Iran, India, and other states. In these deserts there are numerous deposits of petroleum and gas, and a search for water is continuously in progress. Successful prospecting for the above minerals depends on a determination of the material composition of the sandy deposits in these deserts and the solution of several questions of recent tec tonics, paleogeography, and quaternary geology, the answers to which might also be given by a study of the dis tribution of lithological types of sands. 168 pp. Englisch.

The papers presented herein represent a renaissance of interest in reflectance spectroscopy. The techni~ue of reflec tance spectroscopy is not, of course, a new techni~ue, however, it has only been applied to problems of a chemical interest in the last decade or so. The instrumentation for this techni~ue in the ultraviolet, visible, and near infrared regions of the spectrum has been available for many years. New and exciting research is being carried out at the present time to extend these techni~ues to the infrared and far infrared regions as well. First as dyestuffs, meaicinals and tannins and, much later, because of their potential use in examining the systematic an…d evolutionary relationships of plants, and their impli cation in defence against both herbivores and phytopatho gens. It is not surprising, therefore, that the first formally organised Society of Phytochemists, the Plant Phenolics group which was established in England in 1958, should have devoted themselves to an intensive study of these compounds. They were quickly followed by a like group in North America. But, by the mid-1960's, it was obvious to the members of both societies that their net was spread wider than just phenolic compounds and in 1965 both adopted a more appropriate name, The Phytochemical Society (now Phytochemical Society of Europe (PSE), and The Phytochemical Society of North America (PSNA) respec tively). In spite of this broadening of interest, both socie ties have continued to devote a major portion of their deliberations to phenolic compounds and it is entirely appropriate, therefore, that their first joint Symposium, held in the late summer of 1977 at the Rijksuniversiteit te Gent, Belgium, should be concerned with 'The Biochem istry of Plant Phenolics. ' First occasions are often difficult, but the chief organiser of this Symposium, Professsor Ch~is van Sumere, Head of the Laboratorium voor Plantenbiochemie of the Rijksuniversiteit te Gent with his charming wife and enthu siastic staff overcame all obstacles. 664 pp. Englisch.

To join the expertise of the tradi tional surface scientis…t with that of the electron microscopist has however been a slow and difficult process. In the past few years remarkable progress has been achieved, including the development of new techniques of scanning transmission and reflection imaging as well as low energy microscopy, all carried out in greatly improved vacuum conditions. Most astonishing of all has been the advent of the scanning tunneling electron microscope providing atomic resolution in a manner readily compatible with most surface science diagnostic procedures. The problem of beam damage, though often serious, is increasingly well understood so that we can assess the reliability and usefulness of the results which can now be obtained in catalysis studies and a wide range of surface science applications. These new developments and many others in more established surface techniques are all described in this book, based on lectures given at a NATO Advanced Study Institute held in Erice, Sicily, at Easter 1987. It is regretted that a few lectures on low energy electron diffraction and channeling effects could not be included.
