An exceptional, completely unrestored survival of a seminal early 19th-century British trade manual, highly sought after in its original state. Being a first edition of "The Vintner's, Brewer's, Spirit Merchant's and Licensed Victualler's Guide: Containing…the History, Theory, and Practice of Manufacturing Wines, Foreign and Domestic." Printed for W. Wetton, 21, Fleet Street, 1826. Octavo. Complete with the rare engraved frontispiece depicting a cellar scene, and all full-page printed tables comparing the old and new Imperial Measures at rear. Published anonymously by "A Practical Man," this seminal trade manual served as the absolute bible for early 19th-century pub owners, commercial brewers, and wine merchants. It represents a pivotal moment in history when alcohol production shifted from medieval guesswork into a precise science, capturing the exact recipes and methods used before industrialisation standardised the trade. Some of the topics covered are: The Art of the Vintner: Management and doctoring of imported Ports and Sherries, alongside recipes for historic British country wines. Commercial Brewing: Step-by-step institutional formulas for traditional London Porter, London Stout, Burton Ale, and Welsh Ale. Distillation & Cordials: Rare compounding recipes for early pub spirits, including West Indian Rum, Apple Brandy, Caraway Cordial, Lovage, and English Gin. Orchard & Farmhouse Crafts: Complete management of Cider, Perry, and Vinegar production. Early Science: Comprehensive instructions on using the newly invented saccharometer and hydrometer to calculate alcohol proof and prevent fraud. Bound in the original publisher's quarter-cloth over paper-covered boards; edges untrimmed as issued. The original paper spine label is rubbed away. Inside the pages are clean and tightly bound. Has some pencil notations to the front paste down. Inked name and date of 1886 to the front free endpaper and an elegantly-inked name at the top of the first page of text. Damp stain to the bottom corner of the first few pages, including the frontispiece (see photos). Toning to top edge. The occasional handling mark. Front hinge a little loose, but the text block remains firmly bound. Gapes at the gutter in a couple of places. Chipping to paper around the edges of the boards and rubbing/the odd mark commensurate with age. Has possibly had a later cloth laid over the top on the spine. There is a 24-page publisher's catalog at the back. Condition: Condition: Clean back cover; there is a 2" stain at the top edge of the front cover. Tiny cloth tears at the cover corners, and at the top and bottom edges of the spine. Tight binding with no cracks and no loose pages. Both covers are firmly attached. The binding may have been re-glued at one point as there appears to be old adhesive residue along the hinge between the front end papers and pastedowns. The back cover opens stiffly, and there is a thin strip of old tape along the hinge between the rear end papers and pastedown. The frontispiece illustration is present, though the page itself has been clipped around the edges of the frontispiece. The frontispiece has 2 strips of tape along the bottom edge. The text pages are generally clean with only an occasional smudge and some light foxing here and there. Pages v, ix, and xi each have a thin strip of old tape affixed at the outer edge. Overall the book is in Fair condition.

This work collects hundreds of recipes for fermented beverages - wines (foreign and… domestic), malt liquors, cider, perry, vinegar, spirits, liqueurs, cordials, and compounds - alongside a wealth of supporting information. It opens with a history of wine and a treatise on brewing (porter and various ales), then turns to the fermentation and distillation of spirits "of every denomination," including alcohol, brandy, rum, geneva (gin), and whisky. A fourth section covers cider, perry, mead, and vinegar, followed by chapters on cellaring wines, beers, porters, ales, and spirits, with guidance on refining and managing flavour, colour, and concentration as they age. The book closes with three technical chapters: data on hydrometers and saccharometers for the distiller, the Parliamentary laws governing licensed vendors (innkeepers and publicans among them), and several tables for converting weights and measures. Some foxing and other, minor oxidising; leather with minor chip to head of spine, rubbed to fore-edges, but overall very good. The Preface, dated December 1828, explains that the author contributed this pamphlet to the New York Anti-Auction Committee, which sought to stamp out public auctions in New York. He argues that the auction "system holds out… strong temptations to violate integrity." Auctions are "paralyzing the efforts, and rendering futile the plans of regular merchants, by the constant fluctuations in the prices and qualities of goods."
