Jussieu lui-même déclarait : " Le citoyen Baudin doit être proclamé l'un des voyageurs qui a le plus mérité de l'histoire naturelle ". Depuis, le " Journal de La Belle Angélique ", préservé dans les archives du Muséum, s'enfonça peu à peu dans l'oubli. Entièrement inédit, il est rédigé de façon très vivante ; il est magnifiquement illustré d'aquarelles (surtout des végétaux) et de dessins à l'encre (principalement des profils de côtes). Ce colloque international a permis de dresser le bilan des recherches menées depuis vingt-cinq ans. En toile de fond, revient la question lancinante des croisades et des combats en Terre sainte ou de la Reconquista espagnole. Afin d'assurer le versement annuel des revenus nécessaires à ces guerres lointaines (les responsions), « les enfants chéris de saint Bernard », développèrent un important réseau de commanderies tourné vers l'agriculture, la vigne et l'élevage. L'essor de leurs activités financières et bancaires prolongea les opérations de dépôt ou de crédit qu'ils assuraient aux échelons local et régional. Quant aux exemptions de péages et de taxes, elles facilitèrent l'intégration de l'Ordre dans les circuits d'échanges occidentaux, lui permettant d'écouler plus aisément ses productions propres. Les auteurs abordent les sujets les plus variés : depuis la mise en uvre des préceptes de la règle des Pauvres chevaliers du Christ, adoptée à Troyes en 1129, jusqu'aux soutiens familiaux et politiques qui permirent l'enracinement territorial du Temple ; de la géographie et de la structure du temporel en France, en Angleterre, au Pays de Galles, au Portugal, en Italie et dans l'Europe germanique, jusqu'aux conséquences de la guerre en Orient sur le fonctionnement des maisons templières ; de la comparaison des modèles et programmes économiques de l'Ordre avec ceux du nouveau monachisme du XIIe siècle, jusqu'aux conflits à répétition avec les évêques et les autres communautés religieuses ; ou encore le rôle et les limites des privilèges commerciaux qui leur ont été accordés, notamment dans l'aire des foires de Champagne.
