Her term of office lasted 45 years and she was succeeded by her daughter. This book of plain and high-class recipes reflects the two types of cookery taught at the School at that time, with the objectives being to suit those with basic knowledge or working-class women, and to instruct those working in middle and upper-class households, respectively.Basic recipes include fish soup, roast joint, apple jelly and macaroni cheese, whilst upper-class recipes (typically with French names) include sauce demi-glace, souffle de volaille and civet de lievre.With advertisements to the endpapers.
