The eighth edition of this cookery book from The National Training School of Cookery, a teaching organisation in London that lasted from 1873 to 1962.Very scarce to find copies predating this.In the original cloth binding.Mrs. Charles Clarke (Edith Nicholls) was an early pupil of the school and became Lady Superintendent of the National in 1875. Her term of office lasted 45 years and she was succeeded by her daughter. This book of plain and high-class recipes reflects the two types of cookery taught at the School at that time, with the objectives being to suit those with basic knowledge or working-class women, and to instruct those working in middle and upper-class households, respectively.Basic recipes include fish soup, roast joint, apple jelly and macaroni cheese, whilst upper-class recipes (typically with French names) include sauce demi-glace, souffle de volaille and civet de lievre.With advertisements to the endpapers. In the original cloth binding. Externally, smart. With rubbing and bumping to the extremities and marks to the rear board. Bookplate of ones Martin and Pamela Finch to the front pastedown. With amateur reinforcements made to the front hinge, which remains firm. Internally, firmly bound.
