"It was with a feeling of extreme misgiving that I witnessed the loss of the older generation of skilled confectioners through retirements, and the lack of young aspirants to their posts during the war years of 1939-1945. It merely remains for me to point out that "A Course in Confectionery" does not pretend to be more than a somewhat elementary treatise on raw materials and their manipulation. Given this knowledge, it is not a difficult matter to translate the theory into practice, because the written matter contained herein is purely practical knowledge acquired the hard way, and the absence of a long list of formulae is, in my opinion, an advantage. - from the introduction.
