A differenza di buona parte degli autori di ricettati culinari medioevali e rinascimentali, Cristoforo di Messisbugo non era un cuoco professionista ma "scalco ducale" (addetto al taglio della carne), nonché l'economo dispensiere che controllava anche finanziariamente l'attività della corte. Questo è uno dei due importanti ricettari che scrisse, riprodotto nella versione anastatica originale del libro antico cinquecentesco. Il trattato, "Banchetti, composizioni di vivande e apparecchio generale", (pubblicato postumo un anno dopo la sua morte) è suddiviso in tre parti. La prima contiene un elenco delle cose necessarie all'organizzazione dei banchetti, dai vari alimenti alle pentole e attrezzi. La seconda parte descrive in dettaglio le portate di 11 cene, tre desinari e una festa organizzati a corte tra il 1529 e il 1548. Nell'ultima parte, infine, vi sono 323 ricette raggruppate in sei paragrafi (paste, torte, minestre, salse, brodi, latticini). Il libro di Messisbugo rimane una pietra miliare nella storia della gastronomia europea del Rinascimento. Libro.

The funeral inscription of Cristoforo di Messisbugo in the monastery of Sant'Antonio in Polesine From 1524 to 1548, di Messisbugo served at the courts of Alfonso I and his son, Ercole II, in Ferrara, where he organized many lavish banquets. Greatly appreciated as a master of ceremonies, he was made count palatine on 20 January 1533 by the Holy Roman Emperor Charles V. His cookbook Banchetti, composizioni di vivande e apparecchio generale, which was published posthumously in 1549, is addressed to those preparing princely feasts and provides detailed descriptions of the menus for his official banquets at the Este court. As well as listing recipes, it also discusses logistics, decor, and cooking equipment. Some of the dishes he described survive today in the Ferrara area.
