Pungency and dry matter content are the important quality attributes in onions for processing which was higher in forced ventilated storage. The total sugar content was higher and the reducing sugar content was less in forced ventilated storage than natural ventilated storage. This suggested that the dry matter degradation was lower in forced ventilated storage. The storage disease at top was higher due to direct effect of atmosphere to the onion. Modifying the structure with less effect of atmosphere can solve this problem. Storage disease at bottom and middle was reduced in forced ventilated storage. Hence, they are not being used at the farm level as it is beyond the reach of ordinary farmers having small land holding who are growing onion crop. This necessitated to develop an efficient low cost grading machine for onion. The onion should be graded in the divergent rollers type onion grader at 15 rpm roller speed having 8 degree roller inclination to obtain the optimum grading efficiency, i.e., 82.98 per cent on weight basis and 85.25 per cent on number basis.
