A Roma dipinse decorazioni con vedute paesistiche nella villa Doria Pamphili ( da lui stesso progettata in collaborazione con Algardi ), nel palazzo Borghese, al Quirinale ed in S. Maria ai Monti. Grimaldi rappresenta la prosecuzione del particolare tipo di paesaggio creato da Antonio Carracci e dal Domenichino, che egli diffuse anche in quadri da cavalletto, ben identificabili per il colore brillante e smaltato, e in numerosissimi disegni di accurata fattura . Allievo dei Carracci a Bologna nel 1626 si stabilì a Roma, dove nel 1636 divenne membro dell'Accademia di San Luca .La sua attività si estese fino alla corte parigina di Luigi XIV , affrescando anche il Louvre ed il palazzo del Cardinal Mazzarino .
