Tuna flesh pigment content and composition were the subjects of detailed study. The author established techniques for measuring spectral reflectance to create an objective evaluation of the actual color of samples studied. Reflectance curves are included in the book and they exhibit optical absorption peaks characteristic of pigments present in tuna flesh, identical to the absorption curves obtained in transmission measurements made on the same pigments in solution. Acid-acetone extraction was employed to identify hemin chloride in the extract and acid hematin in the residues left after acid-acetone and acid-methanol treatment.
