In 16, pp. 10. Dedica autogr. dell'A. a p. 3. Br. ed. L'A. esordisce in maniera ironica ricapitolando le due principali posizioni relative all'eziologia della pellagra. La prima e' quella del Lombroso: 'a dar retta all'amico Cesare questa cagione e' facilissima a capirsi, non trattandosi che di un avvelenamento vero e proprio, dovuto ad un elemento eterogeneo che si svolge nel frumentone avariato, e, per provare che non ha preso un granchio a secco, e' riuscito ad isolare questo veleno, sperimentarlo sui gatti, ed a farli crepare cogli stessi sintomi che presentano i malati pellagrosi'. La seconda teroria, detta 'carenzialista' ha tra i suoi principali sostenitori Clodomiro Bonfigli: 'a sentire, invece, l'amico Clodomiro [.] gli sperimenti del rivale non valgono un'jota, e la vera cagione che rovina la salute fisica e mentale dei disgraziati agricoltori dell'agro ferrarese [e'] la scarsita' di alimento azotato, la fame cronica - come egli la chiama - che, a poco a poco, riduce l'organismo a quelle tristi condizioni'. Giacchi, da parte sua, proponde per la teoria lombrosiana. In qualita' di direttore del manicomio di Racconigi - scrive - 'mi consta con certezza che la maggior parte di questi disgraziati sofferse giammai di penuria di alimenti, trattandosi, generalmente, di coloni provveduti di bestiame da pascolo, che usano per cibo quotidiano, oltre la solita polenta, formaggio ed altri latticini, senza privarsi assolutamente di pane di frumento, di legumi e, neppure, di carne di vaccina, di pollo o di maiale'. Giacchi prosegue prendendosela quindi con quanti sostenevano la necessita' di migliorare il vitto dei braccianti: 'ci sarebbe da sganasciarsi dalle risa a leggere le ampollose proposte di certi filantropi, i quali, in fin dei conti, consigliano di trattare a carne e vino i coloni ove regna l'epidemia pellagrosa'. Bisogna invece rendersi conto che la colpa e' 'negli acini del mais' e se il Governo e le Commissioni desiderano risolvere il problema dovrebbero cominciare a studiare le qualita' naturali del mais e le alterazioni che accidentalmente puo' subire.
