Er praktizierte u.a. in Bonndorf (Baden) und Konstanz und ging dann als Dozent an das Polytechnikum in Zürich. In Kuranstalten hatte er Gelegenheit, viele Magenkranke zu behandeln. Chemie, ab 1899 Rektor. 1881-1894 Mitglied im schweiz. Schulrat; als Schulratspräs. (1905-26) hatte G. wesentl. Einfluss auf den Ausbau der ETH Zürich. G. wurde damit zur Schlüsselfigur der akad. Chemie und der chem. Industrie. 1909 erster Dr. h.c. der ETH Zürich. 1944 errichtete G.s Tochter Marie die Robert-Gnehm-Stiftung.
