Dentiste cubain formé au New York Dental College et arrivé en France en 1889 pour représenter Cuba au Congrès Dentaire International de Paris, Amoëdo décida de s'établir, comme praticien et professeur, en France. Il y soutint sa thèse en 1898, à l'âge de 35 ans. En 1897, l'incendie qui eut lieu lors de la vente de l'organisation caritative, le "Bazar de la Charité", provoque la mort de 126 personnes dont de nombreuses dames de milieu aristocratique. Plusieurs d'entre elles purent être identifiées par leur dentiste. Ce moyen peu usité d'identification encourage Amoëdo à publier le premier ouvrage moderne traitant d'odontostomatologie médico-légale. Dans ce texte fondateur, l'auteur dresse, après une anatomie dentaire générale, une intéressante classification des pathologies dentaires en fonction des milieux professionnels et sociaux. Bien qu'entaché d'évidents a priori moraux et racistes, lié à son temps, ce texte reste novateur sur bien des points : identification des cadavres, traces de morsures, et surtout relation concrète d'une cinquantaine de cas observés qui permettent à l'auteur d'entrevoir les possibilités, pour les enquêtes judiciaires, de cette fructueuse rencontre entre la médecine dentaire et la justice.
